Moroccan Walnut and Culinary Argan Oil Salad
Ingredients:
- 2 cups mixed greens (e.g., arugula, spinach, and lettuce)
- 1 cup cooked quinoa
- 1/2 cup walnuts, lightly toasted and chopped
- 1/4 cup dried apricots, chopped
- 1/4 cup pomegranate seeds
- 1/4 red onion, thinly sliced
- 1/4 cup crumbled (vegan) feta cheese
Dressing:
- 3 tablespoons culinary argan oil
- 2 tablespoons fresh lemon juice
- 1 tablespoon honey (or date – maple syrup)
- 1 teaspoon ground cumin
- Salt and pepper to taste
Instructions:
- Mix the greens, quinoa, walnuts, apricots, pomegranate seeds, red onion, and feta cheese in a large bowl.
- For the dressing, whisk together the argan oil, lemon juice, honey, ground cumin, salt, and pepper in a small bowl.
- Pour the dressing over the salad and toss gently to combine. Done and enjoy!
