Mediterranean dish: Walnut and Culinary Argan Oil Salad

Walnuts and culinary argan oil can make for a rich and flavorful pairing in a dish. Tasty and Healthy! Nutritious as well, as walnuts have the most Omega 3’s of all nuts, and Culinary Argan oil has the most balanced Omega 6 + 9 of all vegetable oils.

How about a Moroccan-inspired salad? Here’s a recipe idea – and if you want it all Vegan, use date or maple syrup instead of honey. 

Moroccan Walnut and Culinary Argan Oil Salad 

Ingredients: 

  • 2 cups mixed greens (e.g., arugula, spinach, and lettuce) 
  • 1 cup cooked quinoa 
  • 1/2 cup walnuts, lightly toasted and chopped 
  • 1/4 cup dried apricots, chopped 
  • 1/4 cup pomegranate seeds 
  • 1/4 red onion, thinly sliced 
  • 1/4 cup crumbled (vegan) feta cheese  

Dressing: 

  • 3 tablespoons culinary argan oil 
  • 2 tablespoons fresh lemon juice 
  • 1 tablespoon honey (or date – maple syrup) 
  • 1 teaspoon ground cumin 
  • Salt and pepper to taste 

Instructions: 

  1. Mix the greens, quinoa, walnuts, apricots, pomegranate seeds, red onion, and feta cheese in a large bowl. 
  2. For the dressing, whisk together the argan oil, lemon juice, honey, ground cumin, salt, and pepper in a small bowl. 
  3. Pour the dressing over the salad and toss gently to combine. Done and enjoy! 

The omega-3 fatty acids from the walnuts and omega-6 and 9 from the argan oil make this salad delicious and packed with healthy fats. 🍃
