Moroccan Grilled aubergine salad (recipe of chef babab latreize)
Grilled aubergine salad, rich in vitamins, is one of the delicious Moroccan salads.
it is a special salad, as the main ingredient is grilled before cooking,
Serve this salad as main or seperate dish.
3 medium eggplants
2 cloves garlic ( Crushed )
2 tablespoons vegetable oil
2 tablespoons of argan oil
1/4 teaspoon chili (as desired)
1 teaspoon of paprika
1 teaspoon ground cumin
1 tablespoon minced parsley
1/2 coffee black pepper
1 tablespoon minced coriander
Grill eggplant,peel and cut into small pieces
Peel the skin of tomatoes, and cut into small pieces
Cook tomatoes over medium-high heat until liquid has evaporated
In a frying pan over medium heat, put all the ingredients except eggplant and argan oil and stir until it becomes like a sauce.
Add eggplant, argan oil and stir until everything is well mixed and liquid has evaporated.
Serve with red olives.
